Tea is the most universally drunk beverage, apart from water, in the world.  It has been embraced and revered by many diverse cultures over the ages and has stood the test of time – nearly 5,000 years!  It has been honoured by the tea ceremony, used to promote meditation practices, known for its medicinal benefits, used as currency and offered in religious ceremonies.  Apart from this, and perhaps just as importantly, tea has had a strong social impact; it has always been a basis for a gathering of people around which conversation and discussion ensues.  

To put simply, tea comes from the plant camellia sinensis, within which are 2 subspecies – the small leaved Chinese plant (sinensis) which produces a tea that can be delicate in character and the large leaved Assam plant (assamica) which produces a robust, stronger tasting tea.

Tea is typically suited to tropical or sub tropical climates with high rainfall and a rich soil.  As a general rule, the higher the elevation, the better quality of tea, although there are some good low elevation teas available but they do tend to have a concentrated, strong flavour.  The type of tea, whether it be black, white, green or oolong is obtained by varying processing methods.
